This Tokoname-yaki Shiboridashi, a handleless teapot, is exquisitely crafted and features intricate mogake (藻掛) patterns—delicate seaweed impressions created through a traditional technique dating back to the Edo period. The process involves wrapping the teapot in amamo seaweed before firing, where the seaweed burns away, leaving behind unique carbonized markings. As each piece undergoes this natural transformation in the kiln, no two are ever identical.


How to Hold a Shiboridashi (2-Way Method):

  1. First Method:
    Place your hand over the Shiboridashi, with your third finger resting on the lid. Grip the entire body firmly and lift it.

  2. Second Method:
    Lift the Shiboridashi and place it on your left hand. Then, position your thumb on the lid at a 180-degree angle from the spout. Place the other four fingers underneath the body to hold it securely.

About Shiboridashi and Brewing Gyokuro Tea:

The Shiboridashi is a traditional Japanese teapot specifically designed for brewing Gyokuro or other high-grade green teas. These teas require a lower water temperature, typically between 50-60°C, to fully extract their delicate flavors. The holding methods described above are suitable for these lower temperatures. However, if the water temperature is around 80°C, it becomes too hot to handle the Shiboridashi comfortably.

Why Low Temperature Matters:
Gyokuro and high-grade green teas are prized for their umami (savory) flavor, which comes from the high concentration of amino acids in the leaves. These compounds are released into the water even at lower temperatures (around 60°C). On the other hand, bitterness (from catechins and caffeine) is extracted more prominently at higher temperatures (above 80°C). To fully savor the pure umami flavor, it’s essential to use low-temperature water to minimize the extraction of bitter compounds.

Serving Notes:
The amount of tea consumed at a time is typically very small, especially with Gyokuro. Therefore, Shiboridashi is often paired with small cups to enhance the tea-drinking experience.
